Come and experience Christmas and winter, from November to March,: the mating season for Camargue wildlife, particularly its iconic birds, the pink flamingos, which live here year-round and engage in their mating rituals. Their chicks will hatch in the spring.
This is also the time to harvest black winter truffles, an activity that keeps the Provençal hinterland busy throughout the winter from November to March, and which you can take part in before enjoying a delicious omelette or truffle snack
Winter is also the season for ‘oursinades’, where people gather to eat sea urchins in the small fishing ports nestled in rocky coves around Marseille, designer markets, food fairs, shellfish feasts on organic farms and tastings of the traditional 13 Christmas desserts
In towns and villages, in their homes and in churches, the people of Provence are already beginning to put out their Christmas cribs, representing the nativity scene of the Baby Jesus. They compete in ingenuity and patience to create huge miniature animated Provençal villages, with their fountains, flower-bedecked houses, mills, hills and rivers.
On this occasion, many Christmas markets offer clay santons to create absolutely stunning scenes of life in Provence. In Provence, the tradition is to buy one or more santons each year at the markets to add to your nativity scene.
